If one is on a budget, Jean Dehillerin will happily assist the novice in equipping a kitchen with the bare essentials, a request he and his staff often fulfill. This is what he suggests as an acceptable minimum on which to build the perfect cuisine:
— One or two copper pans, 16 and 20 centimeters (a cover is not essential, though Americans seem to love them).
— One or two frying pans.
— A saucepan, slightly rounded up on the sides to make perfect sauces.
— One large stew pot.
— A copper bowl for eggs, 26 centimeters.
— A few knives (one for fish, a specific one for sole, a large chef`s knife, a long bladed slicer and a boning knife.
— Whisks and wooden spoons, the number and sizes depend on personal preference.
— And a nice, ”but not essential” beautiful copper serving dish.
And the bill for all of this? It is about 2,000 francs (about $230), less the VAT, of course.
