Popover donuts
About 3 1/2 dozen
Preparation time: 15 minutes
Frying time: 5 minutes
2 eggs
1 cup sugar
2 tablespoons melted butter
1 teaspoon vanilla
3 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon each: nutmeg, cinnamon
1 cup milk
Oil for deep-frying

1. Beat eggs, sugar and melted butter until well blended. Stir in vanilla.
2. Sift together flour, baking powder, salt, nutmeg and cinnamon. Add alternately with milk to egg mixture until smooth. Do not overmix.
3. Heat oil to 375 degrees in large dutch oven or deep-fryer. Drop batter, by teaspoonsful, into hot oil. Deep-fry until golden brown, donuts will turn themselves. When browned, in about 5 minutes, remove to plate lined with paper towel and toss in sugar.
