4 cups peeled, cubed butternut or other winter squash
4 tablespoons butter or margarine
1 tablespoon brown sugar
1/2 teaspoon freshly ground nutmeg
1/2 teaspoon salt
1. Cook squash cubes in boiling salted until tender, about 15 minutes. Drain well.
2. Whip squash with mixer until smooth. Beat in butter, sugar, nutmeg and salt.
