If you don`t have an outdoor grill or the room to cook outdoors, you still can get that grilled flavor from a new line of marinades for meats. Called Stellwin Marinades, they are flavored with hickory, mesquite and Cajun seasonings.

Of course, if you do have an outdoor grill, they`re great, too, giving the food an extra burst of flavor. According to president Irwin A. Hecht, whose Deerfield company also makes smoking wood chips for barbecues, the marinades can be used in conjunction with your favorite barbecue sauces or on their own.

”A particular favorite that developed during our testing was marinating or heavily basting ribs with the mesquite marinade before baking or broiling, then adding a regular barbecue sauce after cooking,” he said. Look for the marinades in supermarkets for about $2.90 for a 12.6-ounce bottle.
