HAMBURGER-MUSTARD STROGANOFF

1 pound extra-lean ground beef
4 medium shallots, minced
1/2 cup beef broth
1 1/4 teaspoons dried leaf thyme, crushed
1/4 teaspoon each: salt, freshly ground black pepper
1 cup sour cream
1 1/2 tablespoons country-style Dijon mustard
2 1/2 cups egg noodles, cooked according to package directions
1. Cook beef with shallots in 10-inch skillet over medium heat until brown. Pour off excess fat; stir in broth, thyme, salt and pepper. Simmer 5 minutes.
2. Stir together sour cream and mustard. Remove meat from heat and stir in sour cream mixture. Heat through on medium-low heat until hot, 3 to 4 minutes. Do not boil.
3. Drain cooked noodles and put in serving bowl. Pour sauce over noodles, toss to coat. Serve immediately.
