Here`s a quick and easy recipe for summer squash flavored with sun-dried tomatoes. If you like garlic, add more to taste.
QUICK SUMMER SQUASH
Preparation time: 10 minutes
Cooking time: 7 minutes
Yield: 4 servings
1 medium zucchini
1 medium yellow summer squash
2 tablespoons olive oil
1/2 cup finely chopped onion
1 large clove garlic, peeled and minced
1/4 teaspoon salt
Freshly ground black pepper to taste
3 sun-dried tomatoes, chopped coarsely
1. Cut tops off zucchini and summer squash. Cut each in half lengthwise and then again crosswise into 1/4-inch slices.
2. Heat olive oil in large heavy skillet over medium-high heat. Add onion and garlic; cook and stir 2 minutes.
3. Add zucchini, yellow squash, salt and freshly ground pepper. Cook and stir 5 minutes, adding sun-dried tomatoes during the last minute of cooking.
