ROSITA`S, 10026 Roosevelt Rd., Westchester; 708-345-6718. The fresh and authentic Mexican fare at Rosita`s is always cause for celebration. Rosita Rodriguez makes sure everything comes together. She oversees the kitchen and even waits table. She makes many of the dishes, including the super rich flan, every day. And if you need help ordering, look to Rosita. Recommended: Carne asada a la Tampiquena, panuchos, guacamole, margaritas. Hours: 11:30 a.m.-9 p.m. Mon.-Thurs., to 10 p.m. Fri. and Sat. Credit cards: M, V. Reservations: Not needed.-LB
CASTLEWOOD RESTAURANT, 477 W. Irving Park Rd., Wood Dale; 708-766-4236. Castlewood is the sort of family restaurant that serves early morning breakfast to late-night snacks. But breakfast certainly has to be one of its shining hours. The pancake batter is made fresh every day. Recommended:

GILLES, 51 S. Randall Rd., St. Charles; 708-584-8770. If you want to indulge in some summertime nostalgia, visit Gilles. And we do mean indulge. For Gilles serves frozen custard, a concoction that has 10 percent butterfat
(the same minimum as ice cream). Custard also contains egg yolk (a minimum 1.4 percent) to kick in some extra richness. Gilles makes its custard fresh every day. Recommended: Custard, caramel apple sundae, Gillieburger. Hours: 11 a.m. to 10 p.m. daily. Credit cards: Not accepted. Reservations: Not needed. -LB
