Cake decorating: Wilton Enterprises, 2240 W. 75th St., Woodridge. Cake decorating and confectionary classes are offered throughout the year. Elaine Gonzalez will teach classes on chocolate artistry. Health: Culinary Arts & Services, 739 Roosevelt Rd., Glen Ellyn, presents SmartBody, a series of cooking classes for those trying to eat and cook in a more healthful manner, especially with reduced fat. Clybourn Ave. The AMC Cancer Research Center presents ”Metropolis 1800: Exploring Fall`s Harvest.” Chef/Owner Erwin Drechsler will prepare a healthful meal of butternut squash and apple cider soup, mixed greens salad with pear and pecan vinaigrette, seafood fricassee and harvest fruit crisp in accordance with the AMC Cancer Research Center`s 3 easy steps for good health and disease prevention. Seafood: Jaqua, 2201 N. Halsted, Chicago. Chef John Clancy will teach a 5-session seafood cooking class covering such techniques as breading, boiling, deep-fat frying and steaming. Bloomingdale`s, 900 N. Michigan Ave. Nancy Rossberger, culinary director, will hold informal cooking classes featuring quick recipes with tips on healthy cooking. Classes are held weekdays with a guest chef on Thursdays. Classes run from 11:30 a.m. to 1:30 p.m. at the Main Course on the sixth floor. All classes are free. Call 440-4238.

Dominick`s Finer Foods in the Tri-City Shopping Center, 2063 Route 38, St. Charles. ”Seafood University,” a seafood preparation and cooking class is presented by Kimberly Adamson, seafood department manager, the first Saturday of each month. ”Produce University,” presented by store manager Curt Most and produce department manager Randy Klackle, introduces the more exotic kinds of fresh produce available to customers. Kitchentoys Cookery, Old World Village, 518 Market Loop, West Dundee. Margaret Ann Holze holds demonstration classes on new nutritional ideas for shifting eating habits of the `90s.
