A dish of green beans with sun-dried tomatoes is quick to make and loaded with flavor. Serve it with your favorite pasta entree.
GREEN BEANS AND SUN-DRIED TOMATOES
Preparation time: 15 minutes
Cooking time: 5 to 7 minutes
Yield: 2 servings
2 tablespoons chopped, sun-dried tomatoes (not in oil)
8 ounces green beans
2 tablespoons minced red onion
1 medium clove garlic, minced
2 fresh sprigs marjoram, chopped
2 teaspoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon no-salt-added chicken stock
Salt, freshly ground black pepper to taste
1. Soak tomatoes in small dish in hot water to cover. Meanwhile, rinse and trim green beans. Cook in a large pan of boiling water until crisp-tender, 5 to 7 minutes. Drain. Cut into quarters.
2. Drain tomatoes, and mix with green beans and remaining ingredients.
