The pear crop suffered some loses this season, particularly the Bartletts, but there still will be plenty of pears at the market, such as green and red Anjou (pictured), now through the winter. Pears are harvested before they ripen, so they are usually firm at the market. Store them at room temperature till they yield gently to thumb pressure. Once ripe, use them within a few days.
