Fish’s prominence during Lent, which begins today, often brings specials on popular varieties such as cod, flounder and sole. But because fresh fish prices can be volatile, don’t ignore less familiar varieties that may be cheaper. Among them are ocean catfish and white fish such as hake and cusk from the East Coast, and farm-raised varieties, including tilapia, bass, char and mussels.
