EASY BAKED BEANS
Preparation time: 10 minutes
Cooking time: 30 minutes
Yield: 8 servings
Vegetable cooking spray
1 small onion, peeled, finely chopped
1 small green bell pepper, seeded, finely chopped
2 tablespoons water
3 ounces Canadian bacon, cut into 1/2-inch pieces
2 cans (15 1/4 ounces each) low-sodium red kidney beans, drained
2 cans (15 ounces each) white beans, drained
1 cup hickory-flavored barbecue sauce
1/2 cup brown sugar
2 tablespoons Worcestershire sauce
2 to 3 tablespoons cider vinegar
1 teaspoon dry mustard
1. Heat oven to 350 degrees. Lightly coat the bottom of a 2-quart pan with vegetable cooking spray. Add onion and green pepper. Cook over medium heat 5 minutes, adding water as vegetables begin to stick to the pan.
2. Add Canadian bacon and cook 4 minutes. Stir in kidney and white beans, barbecue sauce, brown sugar, Worcestershire sauce, vinegar and dry mustard. Heat to a boil, cover and bake in oven 30 minutes.
