The latest crop of dates appears in the fall and early winter, just in time for holiday baking. Grown from date palm trees in desert oases, dates are thought to have originated in the Persian Gulf region as far back as 5,000 B.C. Look for plump, glossy, fresh-looking fruit with soft skin. They’ll keep, wrapped and refrigerated, a week or two. And remember to pit them before using.
