Holiday tables can get a distinctive, delicate accent from lady apples, miniature members of the apple family that appear in markets in the winter. Yellow or red, they can be eaten raw or cooked. These apples have a sweet-tart flavor; eat them with the skin on–it’s especially flavorful. Like any apple, those you buy at market should look fresh, with bright skin. Refrigerate them for a week, or place in a cool, dry spot.
