Here’s the easiest way to get florets from a whole head of cauliflower: After peeling and discarding its outer leaves, cut off the tough stem with a chef’s knife. (You can save the stem for making cauliflower soup, if you like.) Cut out the hard core of the cauliflower head. Then separate into individual florets with a paring knife.
