Used to be Americans were chided for eating excessive amounts of animal protein–bad for the cholesterol. Fiber and complex carbohydrates were good. Oatmeal was a big deal, and the “bread, cereal, rice and pasta group” formed the foundation of the “food pyramid” printed on the macaroni box.
