Hawaii-based Honolulu Fish Co. has begun a retail division that offers home cooks the same sashimi-grade seafood it sells to high-end chefs across the country–clients include TRU and Kevin in Chicago, and Jean Georges in New York. More than 30 varieties from the Hawaiian Pacific are available, including monchong (a snapperlike, flaky deep-water fish), opakapaka (pink snapper) and walu (white tuna). Some varieties are available only on a seasonal basis. The minimum order is 5 pounds, with a 1.5-pound minimum order on specific species; products are shipped as fresh fillets.
