Sometimes the most simple of appetizers are the crowd favorites. These cheese puffs fit the bill for any type of entertaining.
Surprise cheese puffs
Preparation time: 30 minutes
Baking time: 15 minutes
Yield: 30 puffs

1 stick (1/2 cup) butter, softened
1 cup (4 ounces) shredded Cheddar cheese
1 cup flour
1/2 teaspoon paprika
30 small pimiento-stuffed olives, drained
1. Heat oven to 400 degrees. Beat the butter, cheese, flour and paprika with a mixer on medium speed, scraping the sides of the bowl occasionally, until a soft dough forms, about 1 minute.
2. Roll a tablespoonful of dough around each olive. (If dough becomes too soft, refrigerate 30 minutes). Arrange dough balls 2 inches apart on an ungreased baking sheet. Bake 15 minutes.
