On the Web: The pastry-proficient will love a chance to chat live online with Sebastien Rouxel of Thomas Keller’s four-star Per Se restaurant in New York City. It’s the last of three pastry chats on pastryscoop.com.
The chat is free, from 11 a.m. to noon Dec. 14, and is sponsored by Food Arts magazine. Registration is required.
Rouxel, once the pastry chef for the president of France, fell in love with pastry while working with his aunt at her restaurant in the Loire Valley.
Also: We find ourselves turning often to cheese.com, a Web site that lists more than 650 cheeses, with tasting notes and information about each cheese’s origins. The searchable site lists cheeses by name, by country of origin and by type of milk, and it also has a listing for cheeses made without animal rennet.
And also: Food Network’s Dave Lieberman hosts a web-only series called “Eat This,” which debuted Nov. 21. Lieberman visited Chicago’s Moto restaurant to film a segment in episode one on “scientific food.” Other segments explore specialty meats, spiced chocolates, mixology and flavored salts. Watch it online at foodnetwork.com/eatthis.
On TV: Mark DeCarlo hosts a special “Taste of America” on the Travel Channel, in which he seeks the best holiday foods. Tune in at 7 p.m. Dec. 13.
In print: Saveur scores with two stories in the December issue: One on a Christmas in Moscow celebration, the other a look at winter cooking from Boise’s Basque community.
