“My husband is allergic to eggs, so I have used this recipe during our 40-year marriage,” writes Diane McCall of Chicago. “It was made by my mother and her grandmother for years before I began making it.”

Nuts and spices add texture and flavor to this easy, comforting cake that’s perfect for fall. Sifting two cups of flour will yield about 2 1/2 cups of sifted flour.

Applesauce cake

Preparation time: 15 minutes

Cooking time: 1 hour, 30 minutes

Yield: 12 servings

2 1/2 cups sifted flour

1 1/2 cups sugar

1 teaspoon cinnamon

1/2 teaspoon each: ground nutmeg, cloves, allspice, baking soda, salt

1 1/2 cups applesauce

1 stick (1/2 cup) butter, melted

1 cup chopped nuts

1 to 2 teaspoons each: minced orange, minced lemon zest

1. Heat oven to 275 degrees. Stir together the flour, sugar, spices, baking soda and salt in a large bowl. Stir in the applesauce and melted butter, stirring until moist. Stir in the nuts and citrus zest.

2. Transfer batter to a greased 13-by-9-inch baking pan. Bake until golden and an inserted tester comes out clean, about 1 1/2 hours.
