Quick meals your family will love.
1. Preheat oven to 450 and ready a 12-inch piece of foil for each person.
2. Place a thick 5- to 6-inch white fish filet in the center of each piece of foil.
3. Sprinkle with salt and pepper, and add a thin layer of chopped vegetables (mushrooms, tomato, chopped parsley or other thinly sliced veggies such as shallots, zucchini and spinach).
4. Dot with butter and splash with white wine and/or cream.
5. Toss in a half-teaspoon of jarred chopped garlic.
6. Pull foil together at top and seal, then seal tightly along sides, to make a roomy envelope.
7. Place on cookie sheet in oven and bake about 15 minutes (depending on thickness).
8. Open envelope. Check for doneness (it will be just opaque in center); dump entire contents into a bowl and eat with a spoon, like a stew. Soak up broth with bread.
