People feel very strongly about cake. Some enjoy the moist, cake-y part but eschew frosting. Some pass up the dessert altogether in favor of pie or pastries. And some would walk across the state for one rich, delectable bite. Chocolate or yellow? Carrot or red velvet? Who cares as long as the treat is slathered in frosting and finger-licking delicious? Cupcakes — the longtime favorite of mothers with school-age children and, more recently, brides — and cake balls make up the five-hour Cupcakes and Cake Balls tutorial presented by Glenview’s Viking Cooking School and Culinary Shop. Cake balls, for the uninitiated, are similar to truffles, as they are bite-size balls of cake covered in chocolate. The class will cover baking and decorating. Learn how to roll fondant, prepare buttercream and cream cheese icing, use a pastry bag and create cake ball lollipops. It’s never too late to start brainstorming about treats for the holidays.
