MightyVine Tomatoes is doubling its operation and building another 7.5-acre greenhouse adjacent to the current facility. Since it began selling tomatoes in October, MightyVine now serves fine dining restaurants and grocery stores throughout the Chicago area. The new facility will increase production from about 450,000 pounds of tomatoes a month to about 900,000 pounds in peak months.
