Mixed carnitas at Carnitas Uruapan

True to its name, Carnitas Uruapan doesn’t serve anything put fried pork and the accoutrements to go with it. This is the kind of place where most people order carnitas by the pound, which comes with a stack of tortillas, multiple salsas, onions, cilantro and limes. But you can also get a gargantuan taco if you’re not feeling up to tackling that much meat on your own. The menu comes with a diagram of a pig, ready for you to select where you’d like the meat to come from. I advise asking for “mixto,” so you can get a collection of crispy and fatty parts, along with some nice lean bits, making for the ultimate bite. The carnitas taste like a pure manifestation of pork, with nothing to get in the way. Each morsel tastes richly decadent, yet also slightly sweet. $2.70 per taco
