Beef mixture:
1 1/2 pounds lean ground beef
1 1/2 slices crumbled whole grain bread
1 tablespoon each: chopped pimiento, onion, parsley and green pepper
1 large egg, slightly beaten
1 tablespoon each: salt, dijon mustard, Worcestershire sauce
Dash each: thyme, pepper, garlic powder
Filling:
1 package (10 ounces) frozen broccoli, thawed, drained, chopped
1 egg, slightly beaten
1/2 cup low-fat cottage cheese
2 tablespoons each: chopped ripe olives and grated parmesan cheese
1. Heat oven to 350 degrees. Mix all beef mixture ingredients in large bowl. Put half of the mixture in bottom of a greased 9- by 5-inch loaf pan.
2. Mix filling ingredients in medium bowl. Put filling over beef mixture in pan leaving a 3/4-inch border on all sides. Top with remaining beef mixture. Push down around edges to seal in filling.
3. Bake until top is golden, about 1 to 1 1/4 hours. Let stand 5 minutes. Pour off juices and turn out onto serving platter. SOURCE: Mrs. Jo Mayes.
