The class assignment: Come up with a muffin recipe high in fiber and low in fat.

For the second year, food science classes at the Chicago High School for Agricultural Sciences, 3807 W. 111th St., have participated in the Great American Pig-Out Day, sponsored last Thursday by the American Cancer Society. The day is designed to help educate people about the health benefits of reducing the amount of fat in their diets.

From the approximately 10 recipes originally devised by the students, six winners were chosen to be judged by a tasting panel.

The winning recipe modifies the basic bran muffin by reducing the amount of sugar and using skim milk rather than whole. The fiber, raisins and banana boost the complex carbohydrate content. The muffins are a perfect breakfast item or after school snack. The second place winner was apple walnut surprise muffins and the third place winner was cocomuffs.

After the winning recipe was chosen, students from the high school baked up batches of the winning muffins and made them available last Thursday to classmates and the public at Mount Greenwood Bank, 3052 W. 111th St.

Donations from the two offerings were given to the American Cancer Society.

Each of the winning muffins contains a total of .75 gram of fiber, about 10 grams of carbohydrates, 1 gram of protein and about 1 gram of fat. Total calories are 70 per small muffin.
