The following types of oysters are commonly available at the Plitt Co.:
Kumamoto-From the Pacific Northwest, this small oyster with a clean flavor is available year-round and is low in salinity.
Gulf-Oysters from the Gulf of Mexico are the cheapest offered, running as low as 6 cents an oyster. They are best when eaten from November to March.
Long Island Bluepoint-From the Connecticut side of Long Island sound, these are among the most popular oysters in America, but are not recommended in the summer.
Chiloe-These oysters from Chile, just introduced to America, are high in salinity and are most savory in summer months.
Malpeque Bay-This salty oyster from Prince Edward Island on the east coast of Canada is at its best in summer. –
