INDIAN SPICED COUSCOUS
Preparation time: 10 minutes
Standing time: 5 minutes
Yield: 6 side-dish servings
This couscous goes especially well with baked fish, chicken or lamb, using similar spices.
2 cups water
2 tablespoons dark raisins
1 tablespoon olive oil
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1 cup couscous
2 tablespoons lemon juice
1 tablespoon sesame seeds
1. Heat water, raisins, olive oil, cumin, cayenne and salt to boil in medium saucepan. Stir in couscous. Heat to boil, cover and remove from heat. Set aside 5 minutes.
2. Stir in lemon juice and sesame seeds. Serve warm.
