Many cookbooks recommend cooking lamb to 140 degrees and say it will be rare. It won`t; it will be medium.
For rare or medium-rare lamb, the meat-thermometer reading should be 125 degrees. But keep in mind that there is a chance that not all potentially harmful organisms will be killed at less than 140 degrees. Lamb is well done at 160 degrees.
