The following quick and easy recipe gets a sweet touch with raisins and almonds.
SAUTEED SWISS CHARD WITH ALMONDS AND RAISINS
Preparation time: 10 minutes
Cooking time: 4 minutes
Yield: 4 servings
2 pounds Swiss chard
2 tablespoons olive oil
1 medium clove garlic, peeled, minced
1/4 teaspoon salt
Freshly ground black pepper to taste
3 tablespoons golden raisins
2 tablespoons slivered almonds
1. Wash the chard leaves and pat dry as much as possible. Tear the leaves into large pieces and cut the stems into 1/2-inch pieces.
2. Heat the olive oil in a large heavy skillet set over medium-high heat. Add the garlic and chard. Cook quickly, turning the leaves, just until they begin to wilt, about 2 minutes.
3. Stir in the salt, several grindings of pepper, the raisins and almonds. Continue to cook another minute until the leaves are just tender. Serve.
