Under FDA regulations set to take effect this year, 2 percent milk will finally get a name that reflects its true nature.

You’ve probably assumed that 2 percent milk contains only 2 percent of the fat of whole milk. But the percentage actually refers to the weight of fat in milk–in this case, 2 grams per 100 grams. Whole milk, in contrast, contains 3.3 grams of fat per 100 grams, so 2 percent milk contains more than 60 percent of the fat of whole milk.

Under the regulations, 2 percent milk, which contains 4.7 grams of fat per cup, will be called “reduced fat”; 1 percent milk, with 2.5 grams, will be “low fat”; and skim milk, with less than 0.5 gram of fat, will be labeled “fat-free” or “non-fat.”
