Eggplant has its roots in India. Its long history has not been charmed-in previous centuries, eating eggplant was thought to cause insanity, cancer or bad breath. This meaty vegetable improved its reputation in its travels through China, Europe and the New World, where it arrived courtesy of Thomas Jefferson. The popular purple eggplant is available year-round; the rarer white, yellow and gray eggplants, which are smaller and sweeter, hit their prime in fall. Buy plump, shiny fruit; lighter eggplants usually have fewer seeds. They can be kept for a few days, wrapped, in the refrigerator.
