Acorn squash, a member of the hard-shelled winter squash family, reaches its peak season in the fall and winter. It has a naturally sweet, nutlike flavor and a hollow cavity that’s perfect for filling. Acorn squash has less beta carotene than do other varieties, but is rich in potassium. When buying any winter squash, look for glossy skins. They’ll keep a couple of weeks at room temperature, even longer if stored in a cool, dry and well-ventilated spot.
