It is difficult to get two chefs to agree about anything, but when someone can convince nearly 200 of them to agree on their favorite restaurants, that’s news. The convincers are Charles and Aimee Dale, who own a restaurant in Aspen, Colo. The results of their survey are in a revised second edition of “The Chefs’ Guide to America’s Best Restaurants.”

Privately published at $14.95, the guide offers recommendations in 37 states and the District of Columbia. (Chef s were asked to recommend three restaurants from their home state and three in the U.S.) Listings offer information on decor, personnel and signature dishes. The Chicago area garnered 22 mentions, and Charlie Trotter’s was fourth on a list of “the 10 most mentioned restaurants in America.” Further information may be found at www.chefsguide.com or by calling 888-311-2433.
