The following is a quick recipe that makes a nice side dish for roast poultry or pork. It is adapted from “The Perfect Recipe: Getting It Right Every Time–Making Our Favorite Dishes the Absolute Best They Can Be,” by Pam Anderson.

COUSCOUS WITH APRICOTS AND PINE NUTS

Preparation time: 10 minutes

Cooking time: 5 minutes

Resting time: 10 minutes

Yield: 4 servings

1 tablespoon each: olive oil, butter

1/2 cup finely chopped onion

2 medium cloves garlic, peeled, minced

1/4 teaspoon each: ground cinnamon, ground ginger, turmeric

Pinch ground red pepper

1/2 teaspoon salt

1 cup plain couscous

1 can (14 1/2 ounces) low-sodium chicken broth plus water to equal 2 cups

1/4 cup each: golden raisins, diced dried apricots, pine nuts, minced parsley

1. Heat oil and butter in medium saucepan until butter has melted. Add onion and garlic; saute 4 minutes. Add cinnamon, ginger, turmeric, pepper and salt; stir 30 seconds.

2. Add couscous, broth, raisins and apricots. Heat to boil, stirring well. Cover; remove from heat. Set aside 5 minutes. Stir in pine nuts and parsley. Cover; let stand 5 minutes.
