Rabbit is not a popular meat in this country. But one taste of this appetizer might cause diners to reconsider their preferences. Chef John Bubala takes the roasted meat off the bone and combines it with applewood-smoked bacon, leeks and fava beans in a light sauce. Served in an elegant puff pastry shell for $12, it deserves entree status.
