Bev Bennett of the Los Angeles Times Syndicate writes, “Being able to buy fresh herbs in January is such a treat I use as many herbs as possible. To capture the herbs’ delicate flavor, I usually add them to salads, such as the Cucumber Salad with mint and chives that follows.”
Ingredients
In salad bowl, combine cucumber, mint and chives.
In cup, stir together sugar, vinegar, oil, pepper and salt to taste. Pour over cucumber mixture and toss well. Makes 2 servings.
