Angus Winchester has mixed martinis for Robert DeNiro and poured cosmos for Drew Barrymore. He also owns International Playboy Bartenders, providing staff for movie premieres and fashion shows. This weekend the Brit will shake things up at Domaine.

Q: What’s your ideal martini?

A: I’ll start with Tanqueray No. 10 gin and shake it because I can chill it quicker that way. Then I’ll pour a quarter-ounce of Noilly Prat vermouth into a chilled glass and swirl it around to coat the inside. I’ll wait until the outside of the shaker is really frosted and then pour the gin through a really fine strainer to get rid of all the ice flecks. Finally, I’ll give the martini a lemon twist, making sure the oil from the zest sprays all over the top of the drink.

Q: How do you like to unwind?

A: I have a particularly good time with a drink called a Bramble. It’s basically two ounces of Tanqueray, an ounce of fresh lemon juice and about three-quarters of an ounce of sugar syrup. It’s a “built” drink, so you pour it into the glass over crushed ice and stir it around before you lace the surface with creme de mure, a blackberry liqueur.
