Potatoes are the Rodney Dangerfield of vegetables–they get no respect. Many diets advocate meat and cheese over high-carb potatoes, pasta and bread. But come January, carb-counters who love potatoes may rejoice when Florida growers pitch a hot one–a potato they claim has one-third fewer carbs than the ordinary spud.
