Ever wonder how they coax Cloudy and Stormy from winter hibernation to make their Groundhog’s Day predictions at Brookfield Zoo? They stir up a batch of groundhog cake. Well, we wouldn’t really call it a cake, because it isn’t baked–more of a vegetable terrine, really. Here is how it’s done: Boil 8 pounds each of carrots and sweet potatoes 45 minutes; drain and puree. Add 6 ounces mashed potatoes. Mold the mixture into the shape of a carrot; place on top of romaine lettuce leaves. Use fresh parsley to create the carrot top.
