DEL TORO CAFE’S BARCELONA BURRO
This popular drink was created by bar manager Bradley Bolt after he tasted a concoction in Omaha called the Madrid Mule.–Del Toro Cafe, 1520 N. Damen Ave., Chicago.
Ice
1 to 1 1/2 ounces vodka (like Svedka)
Squeeze of fresh lime juice
Dash of pomegranate juice
3 ounces ginger beer
Mint sprig and lime slice for garnish
Fill a steel mug with ice. Pour in vodka. Add lime and pomegranate juices. Top with ginger beer and stir. Garnish with mint sprig and lime slice. Serves one.
