Tomato-cucumber salsa
Makes 4 servings
Ingredients
1 pound tomatoes, chopped
1/2 large cucumber, peeled and chopped
1/2 cup chopped red onion
1 cup parsley, chopped
1 tablespoon extra-virgin olive oil
1/2 teaspoon salt (or to taste)
– Combine all ingredients in a bowl and let sit 10 to 15 minutes before serving.
Peach, tomato and olive salsa
Makes 4 servings
Ingredients
2 medium peaches, chopped
12 ounces tomatoes, chopped
1/4 cup Kalamata olives, pitted and chopped
1/2 cup fresh basil, chopped
1 tablespoon balsamic vinegar
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt (or to taste)
1/8 teaspoon black pepper
– Combine all ingredients in a bowl and allow to sit at room temperature 10 to 15 minutes before serving.
Tomato, avocado and bacon salsa
Makes 4 servings
Ingredients
3 strips bacon, cooked and chopped
1 avocado, peeled and chopped
12 ounces tomatoes, chopped
1/4 cup cilantro, chopped
1/2 cup chopped red onion
1 tablespoon lime juice
Black pepper and salt to taste
– Combine all ingredients in a bowl and allow to sit 10 to 15 minutes before serving.
