You can add Lettuce Entertain You Enterprises to the list of restaurant operators drawn to the West Loop.
Lettuce will open its third location of Beatrix, the restaurant-cum-coffee-bar named for chairman Rich Melman’s mother, in the heart of the Fulton Market district in spring.
The restaurant (834 W. Fulton Market) represents Lettuce’s first foray into the city’s hottest restaurant neighborhood, and if history is any indication (Lettuce has a habit of creating clusters of its concepts), it won’t be the last. (That clinking noise you hear is the sound of West Loop landlords toasting one another.)
Like its predecessors, the new Beatrix will be open seven days a week for breakfast, lunch and dinner, and weekend brunch. The coffee bar will feature house-made pastries, suitable for dining in or grab-and-go. The location also will feature an outdoor patio.
