The Tribune of July 10 reported the death of Lucien Verge, chef and owner of the L`Escargot restaurants.

Chef Verge, although a native-born Frenchman, had a Midwestern American heart. I was in his restaurant on the 40th anniversary of ”D-Day” when he served all patrons complimentary champagne. When I asked him why, he said,

”To thank all of you for liberating my country 40 years ago.”

I wonder how many French restaurant owners in New York City had the same kind of savoir-faire?
