— The Cooks` Dialogue column in the Food Guide of the May 1 Tribune contained incorrect advice from cookbook author Marilyn Kluger on storing garlic in oil at room temperature. Mary Huck, spokeswoman for the Illinois Department of Public Health, says: ”Storing garlic cloves in oil could be a potential health hazard because the oil could set up a perfect growth medium for toxic spores, which could result in botulism.”
— A story in the same issue on the James Beard Foundation benefit cooking classes, scheduled for June 4 at the Ritz-Carlton Hotel, left out the cost for the classes. The cost is $50, and checks should be sent to The James Beard Foundation, P.O. Box 445, Lake Bluff, Ill. 60014.
