CHEESY CARAWAY CHICKEN

Baking time: 45 to 50 minutes
Yield: 4 servings
1 1/2 cups bite-size cheese crackers
1 teaspoon caraway seed
1/4 teaspoon pepper
2 whole medium chicken breasts (1 1/2 pounds total), halved lengthwise
2 tablespoons milk
1. Heat oven to 375 degrees. Put crackers in plastic bag; crush with rolling pin. Transfer to pie plate or bowl. Stir in caraway seed and pepper. Set aside.
2. Rinse chicken breasts; pat dry. Brush with milk. Roll chicken pieces in crumb mixture, patting to coat both sides evenly. Put, skin side up, in an ungreased 13 by 9 by 2-inch baking pan. Bake until tender, 45 to 55 minutes.
