This unique dish is simple and fast.
TOMATO FETTUCINI WITH BROCCOLI AND ONIONS
Preparation time: 10 minutes
Cooking time: 12 minutes
Yield: 4 servings
1/2 pound broccoli
5 tablespoons olive oil, divided
8 ounces tomato fettucini
1 small onion, peeled, thinly sliced
2 medium cloves garlic, minced
1/4 teaspoon salt
1/2 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh basil
Freshly ground black pepper to taste
1. Cut broccoli flowerettes into small pieces. Peel stems and cut into very thin strips. Heat a medium pan of water to boil, add broccoli and cook 2 minutes. Drain.
2. Heat a large pan of water to boil with 1 tablespoon olive oil. Add fettucini and cook according to package directions.
3. While pasta is cooking, heat remaining 4 tablespoons olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes. Add broccoli and salt; heat through, 4 to 5 minutes.
4. Drain pasta and put back into hot pan. Add broccoli-onion mixture, Parmesan, basil and lots of black pepper. Stir to coat pasta and serve immediately. –
