A two-step option can turn breadmaking into a partially do-ahead job, which may make it more manageable for busy people. Here`s how:

– Once the dough rises, it can be shaped in the pan, covered with plastic wrap and refrigerated overnight.

– The dough also can rise once in the plastic bag, then be punched down through the bag and refrigerated or frozen. Basic white bread holds up for about 2-3 days in the refrigerator, becoming a lightly soured, most delicious loaf. The variations should only be refrigerated overnight. All can be frozen; thaw the dough overnight in the refrigerator.

– Keep in mind that chilled dough requires much more time to rise, about twice as long as dough at room temperature.
