Brussels sprouts have only been around since the 17th or 18th Century, when they were first cultivated in–where else?–Brussels, Belgium. Miniature cabbages that grow off a stalk, the sprouts have a milder flavor than their larger relatives. When shopping, don’t reach for the biggest sprout; the smaller ones have a richer flavor. Look for firm, tightly wrapped heads with a bright green color.
