The following light recipe is adapted from “The Surreal Gourmet Entertains,” by Bob Blumer.
MAMBO CHICKEN
Preparation time: 35 minutes
Marinating time: At least 2 hours
Cooking time: 35 minutes
Yield: 4 servings
For the chicken:
4 chicken breast halves on the bone, skinned
1 large clove garlic, minced
2 tablespoons minced fresh ginger
2 tablespoons each: low- sodium soy sauce, regular soy sauce
1/4 cup fresh lime juice
1 tablespoon dark sesame oil
For the salsa:
2 mangoes, peeled, pitted, cut into 1/2-inch cubes
1/4 teaspoon sugar
Pinch salt
1/4 cup fresh lime juice
1 small jalapeno pepper, stemmed, seeded, minced
2 green onions, finely sliced
2 tablespoons minced cilantro
1. Place chicken in glass dish large enough to hold them in one layer. Mix garlic, ginger, soy sauces, lime juice and oil. Pour over chicken, cover with plastic wrap; refrigerate at least 2 hours.
2. For the salsa, combine the mango, sugar, salt, lime juice, jalapeno, green onions and cilantro. Cover and refrigerate until ready to serve. Stir before serving.
3. Place the chicken in a baking pan and bake in a preheated 350-degree oven 35 minutes or until the chicken tests done. Baste halfway through cooking time with marinade. Serve with salsa.
